Kerala Style Easy Sambar Recipe is a type of south Indian dish which is normally made from Yellow Pigeon Peas / Toor dal and vegetables like tomato, onion, and carrots. This Sambar recipe is different from the typical Sambar made in the other South Indian states. Kerala Style Sambar Recipe is made using a mixture of different vegetables. It is one of the most popular and must served dish in Onam sadyas or other festive occasions.

This Kerala Sambar is not only easy but very nutritious also. Sambar goes well with idli, dosa and even with hot rice for your noon day meal. Try to include in your daily menu.

    Directions

    It is important that you get all the ingredients ready before you jump into the cooking mode as the list is very big!! So lets get started....

    Step1

    Cut all the vegetables either into cubes or thumb sized according to the type of the vegetable. Refer the image above for an idea. Also wash and rinse the dal and keep it aside.

    Step2

    Add the dal into the pressure cooker. Then add the chopped vegetables one after another.

    Step3

    Add turmeric powder, asafoetida and salt.

    Step4

    Next add enough water to cover the vegetables and pressure cook for one whistle. Release the pressure immediately. The vegetables should not be mashed or over cooked.

    Step5

    Meanwhile soak tamarind in enough water for at least 15 minutes. Then squeeze out the pulp and strain the tamarind juice.

    Step6

    Now its time for roasting. Take a kadai or a pan and add coconut oil. Then add the shallots and curry leaves. Saute for a minute in medium flame until it turns translucent. Now add the chopped lady's finger and tomato.

    Step7

    Add chilli powder, coriander powder, sambar powder and asafoetida / kayam powder. Continue stirring in medium flame for another 2-3 minutes until everything is roasted well. Switch off the flame and keep aside.

    Step8

    Add the roasted masala into the pressure cooker, followed by the tamarind juice. At this stage you can also add water according to desired consistency.

    Step9

    Add salt and jaggery and allow the sambar to simmer for few minutes in medium high flame until a liitle thick consistency is reached. Garnish with coriander leaves and switch off the flame.

    Step10

    The final and the most important part is the tempering. Take a small pan heat the coconut oil. Add mustard seeds and allow it to splutter. Then add the remaining ingredients and fry it for few seconds. Pour it into the sambar and close it with a lid.

    Step11

    Our flavorful, spicy and tangy Kerala Style Sambar is ready to be served with hot rice or Idly/Dosa. Enjoy this delicious feast.

    Conclusion

    Take care not to burn the spices/masala powders. Roasting the masala powder long would spoil the taste. This is a simple version of Kerala Style Sambar. In my another blog I would show you how to make the traditional one, by roasting and grinding the coconut with spices.
